The Hypocras is a drink made of wine, spices and honey. It was very popular in the Middle Ages.
A multitude of recipes exist to make the Hypocras, according to the taste of everybody.
The one I'm using here had some successes amongst my friends. ^^
The ingredients :
- 6 bottles of Passetougrain (Bourgogne)
- 1 Kg of honey
- 2 tablespoons of ginger
- 7 seeds of cardamom
- 2 tablespoons of cinnamon
- 10 cloves
Start with opening and emptying the 6 bottles in a big pot (personally I use a "couscoussier", that works very well).
Then heat the honey for a few seconds, in order to fluidify it before pouring it in the wine.
Then prepare the spices as indicated in the list of ingredients and put everything in a clean rag to let them macerate in the wine.
Close the rag with the spices thanks to a string and immerse it in the wine.
Let it macerate for 4 days and stir it from time to time.
At the end of the 4 days, remove the rag with spices and bottle the Hypocras. Ready !
